Peanut Thai Pasta Salad
This SUPER simple pasta salad will have your mouth watering! Takes less than 10 minutes to throw together, is nutritionally dense, and a family favorite!
Peanut Thai Pasta Salad
Salad:
Organic Pasta Noodles (cooked)
1 can Chickpeas
Purple Cabbage, shredded
Zucchini, shredded
Carrots, shredded
Dressing:
1/4 C. Orange Juice (fresh juice from an orange is best)
2 Tbsp Rice Vinegar
1 clove Garlic (minced)
1-4 tsp. Sriracha (optional for additional spice)
*Combine all salad ingredients in a bowl.
*Mix dressing ingredients in a blender or with a whisk.
*Combine salad with dressing. Serve with freshly sliced pineapple. Enjoy!
